Summer is for Salads!
It’s summer and who doesn’t love salad in the #summer! This is one of my FAVORITE salad recipes – packed full of nutrient-rich veggies and a tangy spicy dressing with super star anti-inflammatory ginger root & liver cleansing lemon juice.

Crunchy Salad Recipe:
For the salad: 2 c organic cauliflower, roughly chopped 2 c organic broccoli, roughly chopped; I often peel the stalks and process them in the food processor 1 c organic purple or green cabbage, roughly chopped 1 c organic carrots, roughly chopped 1 ½ c fresh organic parsley, stems and leaves included; roughly chopped by hand 2 organic celery stalks, diced ½ c organic raw unsalted sunflower, organic raw hemp hearts/seeds and/or organic raw unsalted pumpkin seeds 1/3 c dried organic raisins; roughly chopped by hand
For the vinaigrette: 3 T organic olive oil ½ c organic lemon juice 1 T fresh organic ginger, peeled and grated 2 T raw organic honey ½ t sea salt
Chop all the vegetables or use food processor (I highly recommend using a food processor!). Mix with the chopped parsley, seeds and raisins in a large bowl. Place all the vinaigrette ingredients in a small bowl and whisk together. Mix the vinaigrette with the salad ingredients in the large bowl.
